A deeply rich broth made from soft-shelled turtle (suppon) forms the base of this unique hot pot. In spring and summer, it is paired with delicate eel shabu-shabu, while in autumn and winter, carefully selected meats such as wild boar and bear are added, creating a one-of-a-kind culinary experience that changes with the seasons.
